The first thing to do, if you have not already done so, is to contact

to confirm that she is available to cook for you on your chosen
date.
Then, with the help of the Cold Buffet
Catalogue and the Example Menus,
compile a menu for your occasion. Please remember to consider any
specific dietary requirements your guests may have when selecting
your dishes.
If there is a dish you would particularly like, which is not listed
on the menus, do not hesitate to contact Sue to discuss it with
her. Sue is always happy to provide a personal service to meet the
individual needs of every client.
The next step is to discuss with Sue the following points:

your menu

how many guests are to be catered for

do any of the guests have specific dietary requirements

do you require Sue to stay to help serve the food

do you require waitresses

do you need to hire crockery, cutlery, glasses or table linen

what time would you like the food delivered
Sue will then be able to give you a firm quotation for your meal.
